The owner of the cupcake franchise, PinkaBella, is opening up a new candy store in the Redmond Town Center.

Margo Engberg is the force behind the PinkaBella cupcake brand and is opening Margo’s Sweet Shop right next door in the Redmond shopping center. It’s her first candy shop and she said the biggest selling point is a novelty to the area: a cookie dough bar.

“I’m really excited about the cookie dough, I think it’s going to be huge,” she said.

The cookie dough will be egg-free and the shop will offer a variety of sweets ranging from hard candy to caramel apples, shaved ice cream, cotton candy and a soda bar. Engberg wanted to provide foods that are normally only seen at fairs.

“Our big deal was just to be able to expand our offerings,” she said.

When it opens on Aug. 11, Engberg hopes to have a staff of 10 employees and is excited to open another store in the town center, which she said made her a generous offer set up shop.

In previous coverage of PinkaBella, Engberg said she had always dreamed of opening a store selling cakes and cupcakes. She was especially attracted to the elaborate decorations on cupcakes.

Engberg said she decided to open the cupcake store after going to Guatemala to adopt her two older children and learned they had never had a birthday party. She decided to begin making cupcakes for kids in her daughters’ class who couldn’t afford them. Soon after she was being approached by friends to make cupcakes for their parties and other events.

On opening day for PinkaBella, Engberg sold 2,000 cupcakes and has her fingers crossed for a similar opening at her candy shop.

“We’re just really excited,” she said.

Margo’s Sweet Shop is located on the second floor of Redmond Town Center next to PinkaBella.
