Redmond’s Pomegranate Bistro, 18005 NE 68th St., features three special menus for New Year’s Eve, along with music by classic jazz trumpeter Ray Baldwin.
Guests can chose from the Grande POM $75 (food only) or $125 (wines included), which includes a six-course meal paired beginning with an amuse of Absinthe and Yellow Beet Cured Sturgeon paired with a NV Lucien Albrecht Cremant Brut. Dig in with Avocado Quenelles & Red Endive Spears matched with a 2006 aMaurice Viognier, followed by a Creamy Lettuce Soup alongside a 2004 Sassella Nebbiolo. Sliced Main Lobster and Seared Diver Scallops is next, paired with a NV Boizel Brut Rose. The Braised Oxtail Gnocchi with local white truffle is paired with a 2000 Col Solare. End with a Moscato di Asti and a Meyer Lemon Souffle Glace and Hazelnut Sugar Twist Cookies.

For vegetarians, the Veggie POM includes a five-course meal for $45 (food only) or $85 (with wine), starting with an Absinthe Yellow Beet Carpaccio, Creamy Lettuce Soup, Petite Celeriac and Leek Souffle, Laura Chenel Chevre and Ricotta, Pan Seared Citrus Reggiano Semolina Cake and topped off with a Meyer Lemon Souffle Glace and Hazelnut Sugar Twist Cookies.
